Roasted tomato soup

Tomato soup 

 

This is one of my favourite soups. Roasting the vegetables makes a difference in the taste and gives it a delicious flavour. 

 

Ingredients: 

🍅 2 kgs of tomatoes 

🍅 6 cloves of garlic 

🍅 2 onions 

🍅 1 small carrot 

🍅 dried herbs such as oregano & rosemary 

🍅 salt & pepper 

🍅 fresh basil 6-8 leaves 

🍅 2-3 cups of water or stock 

 

Instructions: 

🍅 cut all the vegetables 

🍅 place them in a baking tray except the basil. 

🍅 drizzle olive oil, sprinkle herbs, salt and pepper. 

🍅 roast at 180 degrees for and hour 

🍅 Pour the vegetables in a pot, add water and the basil. Leave it to simmer for a few minutes then blend it. Add water if required. 

🍅 Put it back on low heat to cook for 5-10 minutes then serve with some cream and croutons. 

 

What can the kids do 

👧🏻 wash the tomatoes 

🧒🏼 cut the tomatoes using safe knives 

👧🏽 help line them in the baking tray
