We love this dish, easy recipe which can be prepared a day before and served as lunch, dinner or even sent to school with the kids.
You can make it with beef in that case it’s called cottage pie or if you make it with ground lamb it’s shepherds pie. Whatever you decide to name it you can’t not love it 🤩
Ingredients:
🥘 500g of beef or lamb
🥘 1 big chopped onion
🥘 6 cloves of minced garlic
🥘 2 tablespoons of olive oil
🥘 2 tablespoons of tomato purée
🥘 1 cup of gravy
🥘Diced vegetables. I’ve used a carrot, 1 courgette, broccoli, 1 pack of mushrooms, 1/2 cup of peas, and 1/2 cup corn kernels.
🥘 Salt and pepper
🥘 Dried herbs
🥔 4 big potatoes boiled & mashed
🥔 2 tablespoons of butter
🥔 1/4 cup heavy cream
🥔 2 tablespoons of cream cheese
🥔 1/4 cup of Parmesan cheese
🥔 Salt and pepper
Instructions:
- Boil the potatoes until soft
- In a skillet fry the onions with oil, add garlic and cook for 2 minutes on medium to high heat.
- Add the meat and keep stirring until half cooked 3-5 minutes.
- Add the vegetables and cook for 2 minutes then tomato purée, gravy and seasoning - salt, pepper and dried herbs.
- Leave it to simmer for 15 minutes on medium heat while preparing the potatoes
- Place the potatoes in a bowl, add the butter, cream, cream cheese, Parmesan, salt and pepper and mash them.
- Pour the meat mixture in a baking dish then top it with the mashed potatoes. Sprinkle some cheese and bake it in the oven for 20-30 minutes at 180 degrees.
- Garnish with some parsley and serve hot
