Eggplant Moussaka
A delicious easy dish to make for the family, kids will also love it - just pretend it’s lasagne 😆
Options / alternative:
🚫 KETO: If you are looking for Keto option then omit the tomato sauce or use one with no sugar. You can also make your own with fresh tomatoes.
🚫 VEGETARIANS: Omit the beef and replace the beef stick with vegetable stock. You can also add a layer of ricotta cheese if you wish.
🚫 Dairy free: omit the shredded cheese
Ingredients:
🔹 3 large eggplants- you can use small ones just make sure they are not bitter
🔹 500g of ground beef
🔹 1 big chopped onion
🔹 2 cloves of minced garlic
🔹 3 big tomatoes diced
🔹 1 cup of Tomato sauce
🔹 1 cup of beef stock
🔹 Dried herbs, salt & pepper, fresh basil
🔹 Shredded cheese
Instructions
1️⃣ Preheat the oven to 180 degrees2️⃣ Cut the eggplants thick round slices, add salt and set aside for 15-20 minutes to draw out the moisture.
3️⃣ Place them on the baking paper & drizzle with oil then bake them for 30 minutes flipping them half way. Make sure they are soft when you get them out of the oven.
4️⃣ To prepare the sauce, add olive oil in saucepan on medium heat. Cook the onions for 2 minutes, add the meat & cook it for 5 mins.
5️⃣ Add the tomatoes and garlic, cook them for 5 minutes then add the beef stock & 1 cup of tomato sauce.
6️⃣ add all the spices & basil then let it simmer for 10 mins on low heat.
7️⃣ In a baking dish add a layer of sauce, then layer of eggplants and alternate until you place you have used all of the sauce and eggplants.
8️⃣ place it in the oven for 10 mins then add shredded cheese on top and bake for another 10 minutes.
9️⃣ Enjoy it with rice or bread or just on its own.

- Sprinkle the cheese
