Rose petal fudge

Made it and wasn't sure what to call it. I guess flower fudge or rose petal fudge. 

Can you believe this is a low carb, vegan dessert. I have used 70% cocoa powder and 90% chocolate bits to cover. You can always use whatever chocolate you desire but be mindful of the sugar and dairy in it. 

Ingredients: 

1st layer

- 1.5 cup of nuts (can be walnut, almond or pecan) I chose pecans. 

- 80g of chocolate powder (I used 70% cocoa powder)

- 3/4 cup of coconut flour 

- 15-20 pieces of dates. Go for the soft dates such as Mejdool or Sukkari dates. 

- 2 tbsp of almond butter 

- 1/2 cup of coconut flakes 

- 1 tbsp of coconut oil 

Top layer 

1.5 cups of chocolate

- 2 tbsp of coconut oil 

- 2 tbsp of almond butter 

- 1 tsp of vanilla 

- 1/4 cups of coconut flakes (optional) 

 

Instructions:

1. Place the nuts in a food processor and blend, then add the chocolate and coconut flour and blend more. 

2. Depending on the type of dates you use, you might want to peel the dates. Otherwise just chop them and blend them with the nut mixture. 

3. Add the almond butter, coconut flakes and coconut oil and blend the mixture. Mash all the ingredients together, you may use your hands to create dough like. 

4. Spread in a square dish and smoothen it with the back of a spoon. 

5. In a bowl melt the chocolate, coconut oil, almond butter and vanilla then pour it on top of your mixture. 

6. Sprinkle with edible rose petals and coconut flakes. 

7. Keep in the fridge for at least an hour then slice it.
