What was the most interesting cheesecake combination you ever had. For me it was the lime and basil cheesecake 😄 highly recommended.
You can either make a full cheesecake or if you have guests over then I alway prefer to make them mini. Either way they will look and taste delicious
Ingredients
For the base:
- 1 pack of Digestive biscuits
- 2 tbsp of Almond flour
- 20g of Butter
- 3 tbsp of Brown sugar
For the filling
- 500g cream cheese
- 200g mascarpone
- 50g sour cream
- 3/4 cup white sugar
- 4 tablespoons flour
- 3 eggs
- Vanilla
- 1 lemon juice and 2 limes
- 1 lemon and 2 lime zests
- 10 finely chopped fresh basil
Lemon curd - you can always buy the ready made one
- 3 lemons - juice and zest
- 1 cup of sugar
- 200g of butter
- 3 eggs
- Pinch of salt
- 1 tsp of vanilla
Instructions:
- Blend the crust ingredients in a food processor then transfer them to you baking pan and press it down and on the side. Bake for 5-8 minutes in the oven at 180 degrees
- Mix all the filing ingredients together and once the crust is baked pour it in the pan and bake for 40-50 minutes at 180 degree or for 15 minutes if you are baking mini cheesecakes. Switch off the oven, open the door slightly and leave it inside for an hour.
- For the curd, in a blender mix the zest and sugar. Then add the butter, the eggs one at a time, lemon juice salt and vanilla and mix together.
- Pour the mixture into a pan and cook on medium heat for 10 minutes stirring constantly.
- Add the lemon curd onto the cheesecake before serving and garnish with some berries.
What can the kids do:
- After washing their hands and putting their Mumz Little Chefs hat and apron they can start by:
- Cracking the eggs
- Use their special Mumz Little Chefs knife and cutting board to cut the lime and lemons also they can slice the basil.
- Squeeze the limes
- Measure the ingredients using Mumz little Chefs measuring cups and spoons
- Mix the ingredients using Mumz Little Chefs spatula and whisk
- Decorate the cheesecake with berries
