This is an unusual Mediterranean dish. I remember my grandma used to make it with the inside of the courgette - because well we never like to waste anything. But we found a more delicious way to make it and the kids love it as well. You can either cook it in the pan on the stove or bake it in the oven in muffin tin.
Ingredients:
- 1 bunch of parsley chopped finely
- 1 bunch of spring onions chopped finely
- 3 tablespoons of either pancake mix or flour
- 5 eggs
- 1/4 cup of milk
- 1 tablespoon of olive oil
- 1 teaspoon of baking powder
- Pinch of salt and pepper
Instructions:
- Mix all the ingredients together
- If you feel your mixture is too runny add some flour and if you feel its dry add milk.
- In a frying pan, heat the olive oil then pour the mixture and cover it to cook on medium to low heat. It is very critical to keep the heat to the lower side and leave it covered as it takes a while to cook from the inside. Around 20-25 minutes
- Or you can pour it in muffin tins and bake at 180 for 15 - 20 minutes
